Our lunch menu is guided by a simple yet essential philosophy: “from our estate to your plate.” Chef Dimitris Karousiotis personally selects the purest ingredients, honoring the local land and its seasons. Many of our vegetables and herbs come directly from the Aeolis hotel’s estate, while all other ingredients are sourced daily from local Tinian producers, ensuring unmatched freshness and quality.<\/p>\n
