Our dough blends Neapolitan tradition with creativity, combining five different flours (inlcuding white flour and ancient wheat grain) for a perfect gluten balance. Precise fermentation times, mass calibration, and controlled temperature and humidity ensure a dough that rises and matures to perfection, making it fragrant, melt-in-the-mouth, and highly digestible. For toppings, we personally source high-quality, DOP-certified ingredients from across Italy, bringing them directly to Greece.
Neapolitan pizza isn’t a rigid frisbee; it’s soft and light. While some may prefer using cutlery to avoid the pizza sagging, in Naples, it’s eaten by folding the slice in half by the crust. If the tip is too soft, a fork can help fold it inward, keeping the toppings intact and enhancing the flavor and dough fragrance. We recommend enjoying it this way for the best experience.
